Gallo Pinto – Nicaragua’s national side dish

When you travel to Nicaragua, there is no way around Gallo Pinto. It is the Nicaraguan national dish. The Nicas have it for breakfast, lunch, and dinner. Gallo pinto accompanies almost every meal in Nica. Let us show you how to prepare the specialty with this easy Gallo pinto recipe!

Don’t let the name mislead you the “spotted rooster” is 100% vegetarian. If you traveled across south or central America, you have probably stumbled upon many slightly different version of Gallo Pinto. It’s interesting how the recipe varies from country to country.

The hearty and filling meal consists of rice and common red or black beans. You can eat Gallo pinto with literally anything, cold or warm. We love big, yummy breakfasts and usually had our first serving of Gallo Pinto with scrambled eggs and Nicaraguan cheese.

It takes some time to cook, so make your time worthwhile and cook a little extra!

Ingredients

  • 1 cup of red beans
  • 1 cup of white rice
  • 2  garlic cloves
  • vegetable oil

Instructions

Gallo Pinto recipe

  1. Pour the red beans into a larger bowl and start rinsing them. Drain them and rinse them again before covering them with water for at least 12 hours.
  2. After soaking for 12 hours, rinse the beans again and put them in a pot. Cover the beans with water (about 3 cm), add the garlic. Bring to boil and simmer the beans until they are tender. This should take about 2-3 hours.
  3. Turn off the heat and add a generous amount of salt before letting it sit for another 15 minutes. Drain the beans.
  4. Heat up oil in a separate pot, add rice and fry for 2-3 minutes with constant stirring. Add 2 cups of water and bring to boil before lowering the heat. Cook rice until all liquid is absorbed.
  5. Put some oil in a pan. Turn the heat up high and add the beans while stirring regularly. Don’t let them burn. Add rice after a couple of minutes and give it another twist.

Fatima’s pilau recipe

During our stay in Zanzibar, we got to know Fatima, her husband, and her family a bit better. It was nice to stay outside of town because we were able to observe the authentic village life.

One evening, Fatima introduced us to this tasty pilau recipe. Pilau is considered a typical Zanzibari dish. On the island its also called spice rice.

This pilau recipe is quick and easy while loaded with delicious flavors. Spice rice makes up for a veggie dish by itself, but as we were close to the sea with access to fresh tuna, Fatima proposed to add it to the rice.

The term Pilaf is often used when referring to rice which is cooked in broth. The technique originated in the Middle East but quickly spread across continents. It’s an intensely flavourful dish which will stimulate your taste buds!

The list of ingredients is quite long, but don’t let it scare you! It’s really easy to and quick to prepare.

Ingredients

  • 150 g  of tuna per person
  • 1,5 cups of rice per person
  • cumin spice
  • cardamon
  • curry
  • star anise
  • cinnamon stick
  • smoked paprika
  • minced garlic

For the marinara:

  • Soy sauce
  • Ginger
  •  Garlic
  •  Onions
  • 1 spoon of above-prepared spice mix
  • minced ginger
  • salt
  • pepper
  • 1 cup of broth
  • 1 cup of coconut milk
  • 1 chopped pepper
  • 2 chopped tomato

Instructions

How to prepare Zanzibari Pilau

  1. Preheat oven to 160 degrees
  2. Mix all spices in one bowl and spare one spoon for the marinara
  3. Prepare marinara: mix spices with soy sauce, mashed garlic, and chopped ginger
  4. Let rest for 30 minutes
  5. Heat saucepans with oil and add all spices while stirring. After 2 minutes add tomatoes, onions pepper and quickly saute the tuna filets from both sides for 1 minute before taking them out
  6. Stir in rice and add broth and coconut milk
  7. Warp the tuna in foil and put it into the often for about 15 minutes
  8. Reduce heat and let the rice cook until finished. You may add liquids
  9. Remove cinnamon stick and bay leaf before sending your taste buds on a wild ride!
