Tigrillo Rezept: traditionell zum Frühstück
Tigrillo – Die leckere vegetarische Mischung aus Kochbananen, Rührei, Käse und Koriander, macht die perfekte Mahlzeit für jede Tageszeit. In Ecuador wird Tigrillo traditionell zum Frühstück gegessen, vor allem an der Küste gehört es zum Lieblingsgericht der Einheimischen und Reisenden.
Hauptbestandteil sind Kochbanenen. Wie in allen Ländern Lateinamerikas, aber auch in Afrika und Asien, zählt die Frucht, ähnlich wie bei uns die Kartoffel zum Grundnahrungsmittel.
Typisch für Ecuador ist auch Chicharron – knusprig gebratene, gewürfelte Schweineschwarte, oder das was wir als Kruste vom Schweinebraten kennen.
So wird das traditionelle Essen auch oft mit Chicharron zubereitet. Daher kommt vermutlich auch der Name Tigrillo. Der schwarz gefleckte Ozelot ist eine Raubkatzenart der Leopardengattung, die nur in Mittel – und Südamerika vorkommt.
Einfach beim bestellen Bescheid geben, falls du die vegetarische Version möchtest – “sin chicharron”. So gibt es viele Variationen des ecuadorianischen Rezeptes, doch schon das klassische Rezept ist nicht nur einfach, sondern unfassbar lecker!

- In einem Topf Wasser zum kochen bringen.
- Die Zwiebeln und den Koriander klein hacken, den geriebenen Käse und die Butter bereit stellen.
- Die Kochbananen schälen, halbieren, in der Mitte teilen und in das kochende Wasser legen. Nach ca. 10 Minuten sind die Bananen weich genug, um sie anschließend, wie die Kartoffeln beim Kartoffelbrei zu zerdrücken.
- Während die Bananen kochen, etwas Öl in einer Pfanne erhitzen und ein klassisches Rührei zubereiten. Mit Salz verfeinern.
- Sodann die Butter in einer anderen Pfanne zerlaufen lassen. Die Zwiebeln hinzufügen und leicht andünsten. Anschließend die zerdrückte Kochbananenmasse hinzufügen und heiß werden lassen. Wer es etwas cremiger möchte, kann etwas Brühe oder Sahne hinzufügen.
- Schließlich das Rührei und den Käse ergänzen, kurz warm werden lassen und mit lecker Koriander, Salz und Pfeffer verfeinern. Fertig ist das köstliche Essen
- Wenn du willst, kannst du das vegetarische Gericht nun noch mit einem Spiegelei toppen.
