The small West African country is well-known for its excellent seafood, and visitors will find no shortage of restaurants serving fresh-caught fish and shellfish. But The Gambia’s cuisine goes beyond seafood.

Traditional dishes like domoda (a stew made with chicken or beef) and yassa (chicken or fish cooked in onion sauce) are popular among locals and newcomers alike. And of course, no visit to The Gambia would be complete without trying the fresh-caught seafood. Head to one of the many seafood restaurants lining the Senegambian strip for a delicious meal. Our favorites are The Gambia’s traditional dishes like benachin (a rice and peanut dish), kuih lapis (a steamed cake), or tamarind balls. Or, if you’re in the mood for something refreshing, try halo-halo (a shaved ice dessert with fruits and sweetened condensed milk). Whatever you choose, you’re sure to enjoy the food in The Gambia.

Staple Ingredients

Peanuts

The humble peanut is an important part of Gambian food culture. Often used as a flavoring or thickening agent in stews and sauces, peanuts are also roasted and ground into a paste that forms the base of many popular dishes.

If you’re looking to try something truly unique, head to the capital city of Banjul and order domoda: a stew made with chicken or beef, tomatoes, onion, and sweetened with palm sugar. This dish is usually served over white rice and topped with a generous dollop of peanut butter. Trust us, it’s delicious!

Cassava

Cassava is a staple in Gambian dishes, often appearing as fufu, a mashed-potato like dish that is a popular accompaniment to stews. There are many ways to cook cassava, so it is worth trying a few different dishes to get a sense of the versatility of this humble root vegetable.

Dried fish is a staple in Gambian food culture. You’ll find it in dishes like benachin (a rice and seafood casserole), chicken yassa (a chicken and onion stew), and thiakry (a spiced rice pudding).
